Kate Crocker is a freelance writer and former lawyer. She established the blog Gluten-free Lunchboxes after struggling to find simple and easy lunchbox ideas for her coeliac daughter. As a mother of three, Kate knows a plenty about trying to ensure that her family’s food is nutritious while also juggling life’s demands. She is a home cook who has turned her hand to recipe development. Kate launched her first cookbook, Gluten-free Lunchboxes eCookbook, in February 2015.
